Baked Tilapia with Butternut Squash & Black Beans: Gourmet Dinner with Weeknight Effort


Get a healthy meal on the table in 20 minutes with this easy dinner recipe your family will love!



Confession: I used to be afraid of fish. I have always loved to eat it, especially mild white fish like tilapia. But I was scared to cook it at home, thinking it would smell, be hard to prepare, make a mess etc. I could not have been more wrong! When you pick the right fish it is super easy to make, healthy, fast, and SO delicious. We have fish at least once a week now and when you pair it with a simple one pan side you can have a gourmet meal with weeknight effort - perfect for busy moms like me!

This is one of my go to meals when we've had a busy day and I need to get dinner on the table fast. I love that it's really healthy and tastes delicious, but can be done in just about 20 minutes without too many ingredients.

This meal starts with Bumble Bee SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil. It's perfect to stash in my freezer for busy weeknights because I don't like fried fish or heavy sauces. Never has it been so easy to enjoy a delicious Premium Tilapia fillet! Bumble Bee SuperFresh® Tilapia has ground black pepper, fresh garlic, sea salt and extra olive oil - making every flaky bike fantastic!


To get this dinner on the table in about 20 minutes, start by preparing the Bumble Bee SuperFresh® Tilapia per the instructions on the package. Simply wrap each filet in the enclosed parchment, put in a dish, and bake. It goes straight from the freezer to the oven and cooks in the parchment, so it's really easy and there's no mess to clean up after! 

While your fish is in the oven, you can make this simple side in one pan. It is so tasty, healthy, and perfect for Fall (love the colors for a Halloween dinner!)

Sauteed Butternut Squash & Black Beans


Ingredients:
  • 1 can black beans, drained & rinsed
  • 1 12oz. package of frozen butternut squash cubes, thawed
  • 1/2 cup chopped onion
  • 1 tablespoon butter
  • 1/2 teaspoon Adobo seasoning 
Directions:

Melt butter in a large skillet. Add onion and saute until translucent and soft.

Add in your black beans (make sure they have been rinsed). Stir and cook for about 5 minutes.

Add in thawed butternut squash cubes. You can thaw them by placing in the refrigerator overnight or in the microwave.

Sprinkle with Adobo seasoning and stir everything together. Cook until heated through, stirring occasionally, about 6-7 minutes.


Your beans and squash should be finished at just about the same time as your Tilapia - a complete, healthy meal ready in just about 20 minutes, and just one pan to clean (thanks to the handy parchment)! Serve together and enjoy.
