I love pumpkin in just about everything this time of year. Nothing sounds more heavenly than pumpkin cheesecake, but actually making a cheesecake is a little daunting to me. I wanted to find a special treat that would satisfy my pumpkin cheesecake craving but be simple to put together (and a bit healthier too). I came up with a really yummy parfait that makes the perfect pre-trick or treating snack or Fall dessert.


This Pumpkin Cheesecake in a Cup is so delicious and incredibly easy to make. Everyone in my family loves it (and it tastes a lot more decadent than it really is). It has all the flavors of a rich pumpkin cheesecake without all the time in the kitchen (and the guilt!)

The secret ingredient is Yoplait Greek 100 Whips! Pumpkin Cheesecake. It has a super light and fluffy texture and a yummy pumpkin taste, plus each 4 oz. container has only 100 calories, 0 grams of fat and 9 grams of protein so I can feel good about giving it to my family.

Thanks to this secret ingredient, you can make Pumpkin Cheesecake in a Cup that is quick enough to put together for a weekday snack but delicious and festive enough for a Halloween party or the Thanksgiving dessert table. Pumpkin Cheesecake in a Cup
Makes 4 servings

Ingredients:

  • 4 containers (4 oz. each) Yoplait Greek 100 Whips! Pumpkin Cheesecake
  • 1 cup cream cheese, softened
  • 1/4 cup pure pumpkin puree (NOT pumpkin pie filling)
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 cups graham crackers, broken into small pieces
  • Whipped cream
  • Chopped walnuts (optional)

Directions:

Add yogurt, cream cheese, pumpkin, and pumpkin pie spice in a large mixing bowl. Mix with an electric mixer until well combined and smooth.



In a small cup, place a layer of graham cracker pieces. Add a layer of your pumpkin mix, then another layer of graham cracker pieces, then another layer of pumpkin mix.

Top with whipped cream and walnuts (if desired, these can be omitted).


That's it! You now have a really fun snack that can be dressed up for a Fall party or just enjoyed on a weekday afternoon. And, because it's made with Yoplait Greek 100 Whips! Pumpkin Cheesecake, you don't need to feel guilty when you're done. #SnackandSmile
