As a mom who is home with 4 year old twins every day, I need all the energy I can get. We are always on the go, whether it's playing in the backyard, heading to the pool, or just running errands, they keep me busy and always on my toes. So I need to make sure that I have easy options for lunch and dinner to keep us fueled up for whatever adventure we may take on next.
The daily adventures with my kids is what I love most, and when I saw the Friendship Dairies Fuel Your Fancy contest in the grocery store, I let my mind go crazy with possibilities. Friendship Dairies is giving away $5,000 to a lucky winner to help fuel their fancy - the thing that they love the most. What would you do with an extra $5,000?
It's easy to enter - take a picture of that thing you love to do that makes you, you. Upload the photo at fuelyourfancy.com, or follow them on Instagram or Twitter and share your photo using #FuelYourFancy. You can enter anytime from August 15 to September 11, 2016.
If I could win, I would spend the money on the deck we've been wanting to build to enjoy our favorite place in the world - our backyard - even more. Spending time outside with these guys (and my husband & dogs) is what I love most.
If we had a new deck, we'd be eating outside even more than we do now (probably every meal if the weather cooperated). Fortunately, Friendship Dairies cottage cheese is also the secret ingredient in one of my favorite easy meals that is perfect for outdoor summer dinners (and totally kid approved) - Hawaiian Calzones.
Easy Hawaiian Calzones
This recipe is so simple and my kids love it. They call them "pocket pizzas." It's a perfect summer dinner or even a hearty lunch after a morning by the pool.
- 1 can refrigerated pizza dough (you can use your favorite dough from scratch if you prefer)
- Friendship Dairies Whipped Cottage Cheese - the whipped cottage cheese makes this so delicious - the texture is just perfect.
- Chopped pineapple - canned or fresh
- Ham - I prefer Virginia style as the saltiness goes perfectly with the sweet pineapple, but any variety is fine.
- Italian seasoning
- Pizza sauce
Preheat your oven to 425 degrees. Spray a cookie sheet or pizza pan with cooking spray and set aside.
Roll out your pizza dough into a rectangle and cut into 4 smaller rectangles. Spread a layer of cottage cheese onto one half of each small rectangle, leaving a space along the edge so that you can seal it later.
Sprinkle the cottage cheese layer with a pinch or two of Italian seasoning, pineapple chunks, and shredded ham.
Fold the top over the filling and press with a fork to seal. Repeat for the remaining dough until you have 4 calzones. Place them on the baking sheet/pizza pan and bake for 13-17 minutes, or until the dough is golden brown.
Remove from heat and serve with a small bowl of pizza sauce for dipping. Add a simple green salad to the side for a complete and delicious dinner!
These calzones are perfect for anyone who loves Hawaiian pizza, and since Friendship Dairies cottage cheese has 15 grams of protein in each 1/2 cup serving, you are getting the energy you need for whatever fuels your fancy. No wonder they call it The Original Superfood!
Friendship Dairies cottage cheese is great for all kinds of recipes - from snacks and dips to smoothies to dinners like ours. Get more ideas and inspiration from Friendship Dairies here.
