Easy Hawaiian Calzones

As a mom who is home with 4 year old twins every day, I need all the energy I can get. We are always on the go, whether it's playing in the backyard, heading to the pool, or just running errands, they keep me busy and always on my toes. So I need to make sure that I have easy options for lunch and dinner to keep us fueled up for whatever adventure we may take on next.

If I could win, I would spend the money on the deck we've been wanting to build to enjoy our favorite place in the world - our backyard - even more. Spending time outside with these guys (and my husband & dogs) is what I love most.


If we had a new deck, we'd be eating outside even more than we do now (probably every meal if the weather cooperated). Fortunately, Friendship Dairies cottage cheese is also the secret ingredient in one of my favorite easy meals that is perfect for outdoor summer dinners (and totally kid approved) - Hawaiian Calzones.

Easy Hawaiian Calzones


This recipe is so simple and my kids love it. They call them "pocket pizzas." It's a perfect summer dinner or even a hearty lunch after a morning by the pool.

Ingredients:

  • 1 can refrigerated pizza dough (you can use your favorite dough from scratch if you prefer)
  • Friendship Dairies Whipped Cottage Cheese - the whipped cottage cheese makes this so delicious - the texture is just perfect.
  • Chopped pineapple - canned or fresh
  • Ham - I prefer Virginia style as the saltiness goes perfectly with the sweet pineapple, but any variety is fine.
  • Italian seasoning
  • Pizza sauce
Directions:


Preheat your oven to 425 degrees. Spray a cookie sheet or pizza pan with cooking spray and set aside.

Roll out your pizza dough into a rectangle and cut into 4 smaller rectangles. Spread a layer of cottage cheese onto one half of each small rectangle, leaving a space along the edge so that you can seal it later.


Sprinkle the cottage cheese layer with a pinch or two of Italian seasoning, pineapple chunks, and shredded ham.


Fold the top over the filling and press with a fork to seal. Repeat for the remaining dough until you have 4 calzones. Place them on the baking sheet/pizza pan and bake for 13-17 minutes, or until the dough is golden brown.

Remove from heat and serve with a small bowl of pizza sauce for dipping. Add a simple green salad to the side for a complete and delicious dinner!
